Bacon Blue Potato Salad

6 Red Potatoes, boiled & cubed (with skins on)

2 to 3 green onions, thinly sliced

1 tablespoon minced garlic or garlic powder to taste

½ lb bacon, cooked & crumbled (or more if you like!)

½ cup blue cheese crumbles (or more if you like!)

2 Tablespoons Extra Virgin Olive Oil

1 cup sour cream

Salt & Fresh Cracked Pepper to taste

Combine all ingredients in a large bowl and refrigerate for at least an hour before serving. I think this goes really well with grilled steaks or tri-tip and is a super yummy alternative to traditional potato salad. Let the BBQ Season Begin!!

This is a fun dish that the kids will enjoy. It’s perfect for dinner before trick-or-treating or as a finger food for your Halloween party!

Ingredients:

1 lb Hamburger meat

½ cup grated Parmesan Cheese

½ cup Seasoned Bread crumbs

½ cup finely chopped onion

1 egg

1 tablespoon Worsteshire Sauce

2 tablespoon Ketchup

1 teaspoon Italian Seasoning

½ teaspoon Garlic Powder

Salt & Pepper

Topping:

Mozzarella Cheese

Sliced Olives

Your Favorite Pasta Sauce

Preheat the oven to 450. In a bowl mix all of the ingredients thoroughly with hands or spoon. Shape into meat balls about the size of a golf ball and place in a greased baking dish about ¾ of an inch apart. Make sure they are all the same size to ensure even cooking time. Put in the center rack of oven and bake uncovered for 25 minutes. Remove meat balls from oven and drain fat from the pan. Add sauce to the pan. Place a small round slice of cheese and then a sliced olive on top of each meat ball to look like an eyeball and return to the oven for an additional 10 minutes. You can put them on bread and serve an eyeball sandwich or on spaghetti or just have an eyeball snack!
